  • Arugula Quinoa Salad

  • Ingredients:

    • 1 package arugula
    • ½ cup warm cooked quinoa
    • ¾ cup pomegranate seeds
    • ½ cup sunflower seeds
    • ½ dried cranberries
    • squeezed lemon juice from a whole lemon
    • 2 teaspoons honey
    • ¼ cup olive oil


    Cook quinoa according to package directions. Combine arugula, quinoa, pomegranate seeds, sunflower seeds and cranberries. Top with lemon, honey and olive oil.
