Healthy Serving:
Spinach, Red Pepper, Onion, and Cheese Ravioli

Ingredients:

(1 serving)

  • 2 tablespoons of extra virgin olive oil
  • 2 cups of raw baby spinach
  • 1/4 cup of roasted red peppers
  • 1/4 cup of red onion, chopped or sliced
  • 4 oz. cheese ravioli

Directions:

Cook the ravioli as directed. Heat the olive oil on medium. Add the onion and roasted red pepper. Stir to combine with oil. Heat until onions start to look translucent. Add the baby spinach, stirring to combine. Heat until the spinach is wilted.

**This dish should have some olive oil showing

  • 500 calories
  • 3 vegetables
  • Refined wheat for ravioli (starch)
