Healthy Serving:
Pasta e Fagioli
Ingredients:
(1 serving)
- 2 tablespoons of extra virgin olive oil
- 1/2 cup of red onion, chopped
- 1/3 cup of cannellini beans
- 1/3 cup of canned tomatoes (crushed or chopped)
- 2 oz. of whole wheat pasta (dry weight)
Optional: Herbs
Directions:
Heat the olive oil on medium. Add the onion and cook until soft. Stir in the cannellini beans. Heat for 4 minutes. Add the tomatoes and any herbs. Heat through. Serve over whole wheat pasta.
