Healthy Serving:
Vegetable Fried Rice

Ingredients:

(1 serving)

  • 2 tablespoons of extra virgin olive oil
  • 1/2 cup of celery
  • 1/2 cup of chopped red onion
  • 2 cups of baby spinach
  • 1 cup of cooked brown rice

Optional: Hot sauce

Directions:

Heat the olive oil on medium. Add the celery and onion, stir to combine. Cook 3 to 5 minutes. Stir in the spinach to coat with olive oil. Add the cooked rice. Stir to combine and heat through.

  • 500 calories
  • 4 vegetables
  • 3 starches
