Healthy Serving:
Winter Carrots
Ingredients:
- 1 1/2 pounds carrots, sliced (4 1/2 cups)
- 1/2 cup light or fat-free mayonnaise
- 2 tablespoons chopped onion
- 2 tablespoons prepared horseradish
- 1/4 teaspoon salt
- 1 dash pepper
- 1/4 cup Saltine crackers, crushed
- 2 teaspoons butter or margarine, melted
Directions:
Cook carrots covered in boiling water for 10 minutes or until tender.
Drain. Place in 1 quart casserole dish. Combine mayonnaise, onion,
horseradish, salt and pepper. Spoon over carrots. Mix crushed crackers and
butter. Sprinkle on top. Bake uncovered at 350 for 30 minutes. Serves 4.
