Flavorful spices and the plentiful use of fresh vegetables, and chilies, onions and jalapeno peppers make it easy to enjoy a dish that's not only tasty, but health smart. 

  • Sample fresh salsas or a sip a savory black bean soup as a delicious start to your meal. 
  • Try arroz con pollo, a dish with chicken, spicy rice and plenty of vegetables as an exciting entree. 
  • Think about filling that taco with something different- tacos, enchiladas, and burritos are just as mouth-watering made with chicken or beans instead of the usual beef. 

But be careful: Mexican foods can be loaded up with sour cream, guacamole, and cheese, which often counteract the vitamins and nutrition in fresh vegetables. Try a rich Mexican coffee or an espresso as an end to your meal: Mexican desserts are often fried.
