vegetables as an exciting entree.
- Think about filling that taco with something different- tacos,
enchiladas, and burritos are just as mouth-watering made with chicken
or beans instead of the usual beef.
But be careful: Mexican foods can be
loaded up with sour cream,
guacamole, and cheese, which often counteract the vitamins and nutrition
in fresh vegetables. Try a rich Mexican coffee or an espresso as an end to
your meal: Mexican desserts are often
