  • Black Bean and Corn Salad

  • Ingredients

    • 2 tbsp. extra virgin olive oil
      vinegar and lime juice - use 1/2 of each
    • 1/2 cup black beans, drained and rinsed
    • 1/2 cup corn
    • 1/2 cup red and green peppers, chopped
    • 1/2 cup chopped red tomato
    • 1/2 cup chopped red onion


    Mix together beans and vegetables. For dressing, use 1/2 vinegar or lime juice with olive oil, add a pinch a cumin, chili pepper, salt, pepper and fresh parsley. Add ingredients to a large bowl and top with dressing and serve.
