  • Blueberry Cake

  • (Using Egg Beaters in this recipe lowers the cholesterol content, and the fresh blueberries are known to fight types of cancer.)

    Ingredients:

    • 1/2 cup margarine
    • 1 1/2 cups sugar
    • Egg Beaters equivalent to 3 eggs
    • 1 tsp. vanilla
    • 3 cups flour
    • 3 tsp. baking powder
    • 1/2 tsp. salt
    • 1 cup skim milk
    • 2 cups fresh blueberries

    Combine ingredients and sugar. Add Egg Beaters and vanilla. Mix dry ingredients together and add to egg mixture alternating with milk. Fold in blueberries. Pour into greased and floured 10-inch tube pan or 2 loaf   pans. Sprinkle with sugar before baking. Bake at 350degrees for 45-55 minutes. Yields 16 servings.
