  • Breakfast Burrito (Huevos Rancheros)

  • Ingredients
    • 1 tablespoon extra virgin olive oil
    • ¼ cup chopped onion
    • ½ cup canned black beans, drained and rinsed
    • 1 large egg
    • ¼ cup salsa
    • 2 tablespoons shredded cheese
    • 1 6-inch whole-wheat tortilla



    Use two skillets: one to prepare the mixture and the other to heat the tortilla.

    To heat the tortilla:

    Lightly oil the skillet and heat on medium. Add the tortilla and heat on 2 sides. You may need to add a little more oil as you heat the tortilla, especially if you are cooking more than one. Keep warm while the mixture cooks. When the tortilla is heated, the pan is used to cook the egg.

    To cook the egg:

    1. Heat the olive oil on medium. Add the onion, stir to combine. Heat 4-5 minutes or until the onion is translucent.
    2. Add the drained black beans, stir to combine and heat 1-2 minutes.
    3. Add the salsa and heat while the egg cooks.
    4. Break the egg into a bowl, taking care not to crack the yolk. Add a little more oil to the pan used to heat the tortillas.
    5. Gently slide the egg into the pan and cook until the white is opaque. Carefully turn the egg when the white is opaque.
    6. Sprinkle the egg with the cheese, cover and heat until the cheese melts.

    Place the heated tortilla on a plate. Top with the bean mixture and then the egg with the cheese side up.

    Makes one serving.
