  • Jojo's Black Bean and Corn Dip

  • Ingredients:

    • 1 (14.5 oz.) can black beans, rinsed and drained
    • 1 can or frozen whole kernel corn, drained and cooked
    • 1 medium red onion, chopped
    • 1 red bell pepper, chopped
    • 1 jalapeno pepper, chopped
    • 2 tbsp. fresh cilantro, chopped
    • 2 tbsp. freshly squeezed lemon juice
    • 1 tbsp. olive oil
    • 1/4 tsp. salt

    Directions:

    Combine all ingredients and mix well. Serve at room temperature with tortilla chips, or as a side dish. Enjoy!
