Makes 6 servings.
3 chickens, cut up, skin removed.
¾ cup fresh lemon juice
½ large onion, minced
1 tablespoon salt
½ tablespoon pepper
½ tablespoon thyme dried or 2 tablespoons fresh
½ clove garlic, crushed
Green and red grapes for garnish
Combine lemon juice, onion, salt, pepper, thyme and garlic. Arrange chicken in a baking pan and pour lemon mixture over all parts. Marinate overnight.
Preheat oven to 375 degrees and bake for 1 to 1 ½ hours.
