  • Pasta and Beans

  • Ingredients:

    (1 serving)

    • 2 tablespoons of extra virgin olive oil
    • 1/2 cup red onions, chopped
    • 1/3 cup cannellini beans
    • 3/4 cup canned tomatoes (crushed or chopped)
    • Herbs of choice (optional)
    • 3 oz.(dry wt.) whole wheat pasta

    Boil pasta, while waiting prepare the topping. Heat olive oil on medium heat, add onions, cook until soft then add cannellini beans, heat 4 minutes. Add tomatoes and dry herbs, heat through, toss over pasta and serve.
