  • Pasta e Fagioli

  • Ingredients:

    (1 serving)

    • 2 tablespoons of extra virgin olive oil
    • 1/2 cup of red onion, chopped
    • 1/3 cup of cannellini beans
    • 1/3 cup of canned tomatoes (crushed or chopped)
    • 2 oz. of whole wheat pasta (dry weight)

    Optional: Herbs

    Heat the olive oil on medium. Add the onion and cook until soft. Stir in the cannellini beans. Heat for 4 minutes. Add the tomatoes and any herbs. Heat through. Serve over whole wheat pasta.
