Healthy Serving:
Baked Squash Cups
Ingredients:
- One large butternut or acorn squash
- Apple cider
- Brown sugar or maple syrup
- Cinnamon
- Nutmeg
Directions:
- Slice butternut or acorn squash in half; scoop out seeds
- Place halves cut side down in baking dish
- Pour apple cider into dish to 1-inch level
- Bake uncovered in 350o oven for hour
- Remove and fill squash cavity with:
- 1 tbsp. brown sugar or maple syrup
- dash cinnamon
- dash nutmeg
- Bake cut side up for another hour or until tender.
