Healthy Serving:
Baked Squash Cups

Ingredients:

  • One large butternut or acorn squash
  • Apple cider
  • Brown sugar or maple syrup
  • Cinnamon
  • Nutmeg

Directions:

  • Slice butternut or acorn squash in half; scoop out seeds
  • Place halves cut side down in baking dish
  • Pour apple cider into dish to 1-inch level
  • Bake uncovered in 350o oven for hour
  • Remove and fill squash cavity with:
    • 1 tbsp. brown sugar or maple syrup
    • dash cinnamon
    • dash nutmeg
  • Bake cut side up for another hour or until tender.
