Healthy Serving:
Quick Faux Indian Rice Salad
Notes for the chef: The Patak's Curry Paste
seems very expensive, but it keeps well in the refrigerator and a little
goes a long way. You may end up loving it and can use it in several
recipes. Find it at Asian and gourmet stores.
Ingredients:
- 2 cups uncooked brown basmati or long-grain rice
- 1 can black beans (16 ounce), drained
- 1 can mild chili (4 ounces) or 4 fresh ones
- 2 tablespoons Patak's Curry Paste
- 1 tablespoon cumin
- 1 tablespoon coriander
- 1/2 tablespoon fresh ginger, minced
- 1 cup raisins
- 1 clove garlic (or 2)
- Fresh cilantro
Directions:
Cook the rice. Chop the chili, garlic and cilantro. Mix everything into
the warm cooked rice. Chill for 1-2 hours. Eat. Enjoy. For a spicier
version, add more chili, garlic and curry paste. Serves about 8.
