Healthy Serving:
Kentucky Johnny Cake

Ingredients:

  • 1 cup flour
  • 1 cup cornmeal
  • 1/2 cup wheat germ, toasted
  • 3 tbsp. butter
  • 1 tsp. baking soda
  • 1/2 cup sugar
  • 1 egg
  • 1 cup buttermilk

Directions:

Combine flour, cornmeal and wheat germ and set aside. Cream sugar and butter and add egg. Alternately add dry mix and buttermilk. Bake 30 minutes at 425. Serves 12.
