Healthy Serving:
Spicy Noodle Salad
Notes for the chef: Spicy Noodle Salad goes well with grilled
vegetables
and grilled chicken.
Ingredients:
- 1 pound linguine or soba noodles, uncooked (soba works best)
- 1/2 head Romaine lettuce
- 1/2 cucumber, seeded and sliced
- 4 baby carrots, cut into matchsticks
- 1/2 cup sesame seeds, toasted
For sauce:
- 4 tablespoons tahini
- 2 tablespoons canola oil
- 1/3 cup rice vinegar
- 2 tablespoons sugar
- 2 tablespoons soy sauce

- 1 teaspoon crushed red pepper (less if you prefer it more mild than
spicy)
- 3 cloves garlic, finely chopped
- 1/2 teaspoon minced ginger

Directions:
Cook pasta and allow to cool. Prepare sauce by combining all
ingredients in a food processor or mixing well in a bowl. Add sauce to
pasta and mix well. Serve on beds of lettuce and garnish with cucumbers,
carrots and sesame seeds.
To toast sesame seeds: Place seeds on foil or flat baking sheet. Bake
at 325 for a few minutes, until golden brown. Serves 4.
