Healthy Serving:
Lentil Soup
Ingredients:
- 3 T olive oil
- 1/4 pound lean ham in thick pieces
(can use Canadian bacon or trimmed slab bacon)
- 3 cloves garlic
- 1 medium onion
- 2 carrots
- 7 cups chicken broth
- 1.5 cups dry lentils
- Sprig of lemon thyme
- 2-3 bay leaves
Heat on medium heat 1 T olive oil in 8 qt soup pan. Add ham to oil and
cook about 5 minutes. While ham is heating, chop up garlic, onion and
carrots into small pieces. Remove meat after 5 minutes and set aside.
Add chopped vegetables to oil and reduce heat to low. Cover and cook
for about 25 minutes.
Add chicken broth, lentils, thyme and bay leaves. Turn heat up to
medium/high. Bring to a boil and them lower heat. Cover and cook for 45
minutes.
Remove thyme and bay leaves and add ham. Makes 8 servings.
