Healthy Serving:
Puttanesca Sauce

This can simmer for up to 1 hour. The longer it simmers, the better the favors mix. Can be made day before.

Ingredients:

  • 2 tsp olive oil
  • 1/2 small onion
  • 1 clove garlic
  • 2 oz. can of anchovy fillets
  • 2 T capers
  • 10 medium olives
  • 3/4 cup crushed tomatoes
  • Basil, oregano, parsley (all fresh, if possible)
  • Red pepper flakes
  • Black pepper

Directions:

  1. Mince garlic and chop onion into small pieces. Heat oil on low/medium. Reduce heat to low and add garlic and stir for about 2 minutes. Garlic should be golden. You can remove garlic, if you like.
  2. Add red pepper flakes and stir for about 1 minute (brings out flavor of red pepper).
  3. Add chopped onion and cook until clear (depends on age of onions, usually 3-7 minutes).
  4. Add anchovies and break up with a fork. Add the olives, capers, herbs, and tomatoes. Stir together.
  5. You can either just cook briefly, at this point (10 minutes) or leave on low to mix flavors together.
