Healthy Serving:
Puttanesca Sauce
This can simmer for up to 1 hour. The longer it simmers, the better the
favors mix. Can be made day before.
Ingredients:
- 2 tsp olive oil
- 1/2 small onion
- 1 clove garlic
- 2 oz. can of anchovy fillets
- 2 T capers
- 10 medium olives

- 3/4 cup crushed tomatoes
- Basil, oregano, parsley (all fresh, if possible)
- Red pepper flakes
- Black pepper

Directions:
- Mince garlic and chop onion into small pieces. Heat oil on low/medium. Reduce heat to low and add garlic and stir for about 2 minutes.
Garlic should be golden. You can remove garlic, if you like.
- Add red pepper flakes and stir for about 1 minute (brings out flavor of
red pepper).
- Add chopped onion and cook until clear (depends on age of onions,
usually 3-7 minutes).
- Add anchovies and break up with a fork. Add the olives, capers, herbs,
and tomatoes. Stir together.
- You can either just cook briefly, at this point (10 minutes) or leave
on low to mix flavors together.
