Healthy Serving:
Frittata with Vegetables & Cheese
Ingredients:
- 2 eggs
- 1 3/4 cup small macaroni, cooked
- 1/3 cup chopped, frozen broccoli
- 2 T grated parmesan or Romano cheese
- herbs (dry or fresh basil, oregano)
- 2 T chopped onion
- 2 tsp olive oil
Turn on the broiler.
Coat 9 inch skillet with oil. Heat on med until oil is hot (but not
smoking) (about 2-3 minutes). (Add the onion and cook until golden)
While the onion is cooking, whisk/mix together the eggs. Add the pasta, broccoli, cheese and herbs. Mix
thoroughly.
Pour into the skillet and spread around the pan so the mixture covers
the pan. Lower the heat to low and cook until set (about 5 minutes). The
top should look like it is drying. You can use a metal spatula to test the
sides. When it is set, you will be able to pick it up like a pancake.
Remove from the heat and place under the broiler. Broil until top is
set (about 2-3 minutes). The top may start to brown quickly, so it is
best to watch it cook.
