Healthy Serving:
Garlic, Pine Nuts, Roasted Red Peppers & Olive Oil with Fresh Tomato

Ingredients:

  • 1 T olive oil
  • 1 T pine nuts
  • 1 med garlic clove
  • 1/4 cup roasted red pepper
      (about 1/2 of a whole pepper)
  • 1/3 cup tomatoes
  • 2 T fresh parsley
  • Black pepper

Mince garlic. Heat olive oil in skillet on medium heat. Add pine nuts and garlic. Stir over medium heat until nuts and garlic are light brown (about 2 min).

Add the roasted red peppers and cool another 2 minutes, stirring occasionally.

Add the tomatoes. (Black pepper, if want). Continue to stir over medium heat until tomatoes are heated (about 3 minutes). Remove from heat and add parsley.
