Healthy Serving:
Garlic, Pine Nuts, Roasted Red Peppers & Olive Oil
with Fresh Tomato
Ingredients:
- 1 T olive oil
- 1 T pine nuts
- 1 med garlic clove
- 1/4 cup roasted red pepper
(about 1/2 of a whole pepper)
- 1/3 cup tomatoes
- 2 T fresh parsley
- Black pepper
Mince garlic. Heat olive oil in skillet on medium heat. Add pine nuts
and garlic. Stir over medium heat until nuts and garlic are light brown
(about 2 min).
Add the roasted red peppers and cool another 2 minutes, stirring
occasionally.
Add the tomatoes. (Black pepper, if want). Continue to stir over medium
heat until tomatoes are heated (about 3 minutes). Remove from heat and add
parsley.
