Healthy Serving:
Tangy Potato Salad
Ingredients:
- 1 1/2 tsp. horseradish
- 1/4 tsp. salt
- 1/4 tsp. prepared mustard
- 1/4 tsp. celery seed
- 1/2 cup plain skim milk yogurt
- 4 cups diced, cooked potatoes

- 1/2 cup chopped celery
- 1/4 cup chopped green pepper
- 1/4 chopped onion
- 2 tbsp. chopped pimento

In a small bowl, combine horseradish, salt, mustard, and celery seed.
Fold in yogurt. In a medium bowl, combine potatoes, celery, green pepper,
onion, and pimento. Add dressing to salad and toss only until blended.
Cover and chill. Yields 6 servings.
