Healthy Serving:
Whole Wheat Pasta with Artichokes and Roasted Red Peppers

Ingredients:

(1 serving)

  • 2 tablespoons of extra virgin olive oil
  • 1/2 cup pf roasted red peppers, chopped or sliced
  • 1 cup of chopped canned artichokes
  • 1 cup of cooked whole wheat pasta

Directions:

Heat the olive oil on medium. Add the pieces of roasted red pepper. Heat 3 to 4 minutes. Add the chopped artichokes. Heat an additional 5 minutes. Serve over one cup of cooked whole wheat pasta.
