White Bean and Tomato Appetizer
Ingredients
- ¼ cup canned cannellini beans, rinsed
- ½ cup chopped fresh plum/Roma tomato
- 2 teaspoons extra virgin olive oil
- 6 olives, chopped and pits removed
- 2 tablespoons fresh, flat-leaf Italian parsley
- 1 tablespoon chopped fresh basil
- Sea salt, black pepper
Directions
Mix all the ingredients together.
Season with sea salt and black pepper.
Serve at room temperature on a bed of
mixed greens or arugula.
