White Bean and Tomato Appetizer

Ingredients

  • ¼ cup canned cannellini beans, rinsed
  • ½ cup chopped fresh plum/Roma tomato
  • 2 teaspoons extra virgin olive oil
  • 6 olives, chopped and pits removed
  • 2 tablespoons fresh, flat-leaf Italian parsley
  • 1 tablespoon chopped fresh basil
  • Sea salt, black pepper

Directions

Mix all the ingredients together. Season with sea salt and black pepper. Serve at room temperature on a bed of mixed greens or arugula.
