Healthy Serving:
Anti-YoYo Carob Biscotti
Ingredients:
- 1 cup unbleached flour
- 1 cup whole wheat flour
- 2/3 cup sugar
- 1/4 cup carob powder
- 2 tsp. baking powder
- 2 tbsp. butter or margarine
- 3 egg whites
Directions:
- Combine the flours, sugar, carob and baking powder. Stir to mix
well. Cut in the margarine until the mixture is coarse. Stir in egg
whites.
- Turn dough onto lightly floured surface and shape into two 9x2-inch
logs. Coat baking sheet with cooking spray and place the logs 4 inches
apart on sheet. Bake at 350 for 25 minutes or until lightly browned.
Cool at room temperature for about 10 minutes.
- Use a serrated knife to slice the logs diagonally into 1/2 slices.
Place the slices, cut side down, in a single layer on an ungreased
baking sheet. Bake at 350 for 18 minutes or until dry and crisp. Turn
slices over halfway through baking time. Cool completely on wire
racks. Store in airtight container. Makes 24.
