Healthy Serving:
Marinated Fish Steak Kabobs

Makes 4 to 6 servings.

Ingredients:

  • 2 pounds halibut or swordfish steaks
  • 1/8 cup olive oil
  • ½ cup dry white wine
  • 2 tablespoons lemon juice
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • ½ teaspoon oregano
  • 12 cherry tomatos
  • 6 fresh mushrooms

Cut fish steaks into chunks, removing any bones and skin. Combine oil and spices and marinate fish several hours or overnight. Place fish and vegetables on skewers and grill 5 minutes per side.

This entire dish can be baked, uncovered, at 375 degrees for approximately 10-15 minutes.
