Healthy Serving:
Grapefruit and Miso Glazed Red Snapper

Makes 4 servings

Ingredients:

  • 4-6 ounces red snapper fillets
  • 2 tablespoons grapefruit zest
  • 1 grapefruit
  • 2 tablespoons packed light brown sugar
  • 2 tablespoons miso paste
  • sea salt
  • pepper

Preheat oven to 425 degrees.

In a small bowl, whisk together zest, juice, sugar and miso paste. On a sheet pan, arrange fillets skin side down, and season with salt and pepper. Spoon miso mixture over each fillet. Bake for 15 minutes, basting occasionally. Serve immediately.
