Healthy Serving:
Quick Pasta with Shrimp and Asparagus

(ready in less then 15 minutes)

Ingredients:

  • ½ lb pasta ( whole wheat or wheat blend is best)
  • 1 can (14.5 oz) chicken broth (reduced-sodium)
  • ½ lb asparagus (washed, trimmed and cut in half)
  • ½ lb medium shrimp (cooked and peeled)
  • Cracked black pepper
  • Garnish
  • Grated Parmesan
  • Fresh parsley or basil, chopped

Directions:

  1. In a small saucepan bring chicken broth to a boil.

  2. Reduce to simmer until half of it is starting to volume. Meanwhile, bring water to boil.

  3. Add pasta

  4. Halfway though cooking time, add asparagus

  5. When pasta and asparagus are just about done, add shrimp (just to heat)

  6. Drain.

  7. In a large bowl, combine reduced chicken broth, pasta, shrimp, and asparagus

  8. Season to taste with cracked black pepper

  9. Garnish with herbs and grated cheese

Dietitian’s tip:
To complete the meal, serve with salad of jarred roasted red peppers that have been drizzled with olive oil, balsamic vinegar and black pepper. Healthy Harvest is a pasta containing some whole grains for those trying to transition to whole grains.
