Healthy Serving:
Lite & Healthy Loaded Veggie Pizza
Ingredients:
- 1 serving Lite & Healthy Pizza Dough
- 1 serving Lite & Healthy Pizza Sauce
- 1 cup shredded, fat-free mozzarella cheese
- ¾ cup fresh mushrooms (pieces and slices)
- ¾ cup fresh sweet, red bell pepper (sliced)
- 1 cup fresh red onion (sliced)
- ½ pound fresh, whole eggplant (peeled and sliced)
- ¼ pound canned, quartered artichoke hearts
- 2 ears fresh, sweet, yellow corn (7.75”-9” long, remove kernels for use and discard ears)
Directions:
Preheat oven to 450 degrees.
Sprinkle flour on a clean counter or large cutting board. Place pizza dough ball on top of flour, so bottom of dough ball is coated with flour. Flip the dough ball over and coat the other side with flour. Knead the dough ball down starting from the middle and working out toward the edges to work the air out. Roll dough into a circle with a rolling pin, starting from the middle and working out toward the edges. Spread the pizza sauce on the pizza crust, sprinkle with mozzarella cheese, then top with vegetables. Place pizza on a cookie sheet or pizza stone and bake for 15-20 minutes or until crust is golden brown. Makes 8 servings (1 slice per serving).
