Healthy Serving:
Mrs. Potenza's Easy Casserole

  • 15 ounce can tomatoes with onions, celery and green peppers
  • (Del Monte or Hunt's Chunky will do fine)
  • 1 cup elbow macaroni
  • 2 tablespoons margarine
  • 2 tablespoons sugar
  • Dash of salt
  • Dash of pepper

Put tomato mixture in a heavy pan. Add sugar, salt and pepper. Bring to a boil and simmer. Cook macaroni separately. When done, drain and rinse with hot water. Add to tomato mix and stir. Let stand. Makes a great meal for 4 people. When you re-heat, add a little water.
