Healthy Serving:
Mrs. Potenza's Easy Casserole
- 15 ounce can tomatoes with onions, celery and green peppers
- (Del Monte or Hunt's Chunky will do fine)
- 1 cup elbow macaroni
- 2 tablespoons margarine
- 2 tablespoons sugar
- Dash of salt
- Dash of pepper
Put tomato mixture in a heavy pan. Add sugar, salt and pepper. Bring to
a boil and simmer. Cook macaroni separately. When done, drain and rinse
with hot water. Add to tomato mix and stir. Let stand. Makes a great meal
for 4 people. When you re-heat, add a little water.
