Healthy Serving:
Italian Rice Pie

Ingredients:

  • 1 lb. white rice
  • 6 eggs
  • 1 quart milk
  • 1 pinch cinnamon
  • 1 tbsp. vanilla
  • 16 ounces ricotta cheese
  • 2 c. sugar
  • stick margarine
  • 1 c. drained, crushed pineapple

Directions:

Cook rice as directed on box. Add ingredients together. Bake for 1 hour at 350 in greased, rectangular pan.
