Healthy Serving:
Spinach, Olives & Red Pepper

Ingredients:

  • 2 tsp. olive oil
  • 1 clove garlic
  • 4 oz. frozen spinach, defrosted and drained
  • 10 medium olives
  • 1 roasted red pepper (from jar)

Mince the garlic. Heat olive oil on med/low. Add garlic and cook for 2-3 minutes.

Add spinach and stir to coat with oil. Cook 3-4 minutes.

Add olives and roasted red peppers and heat through, about 3-4 minutes.
