Healthy Serving:
Tuna, White Beans & Olives
in Tomato Sauce
Ingredients:
- 2 t olive oil
- 1 clove garlic
- 1/3 cup drained/rinsed white beans (cannelloni)
- 2 oz can tuna packed in water, drained
- 10 med. olives
- 1/2 cup tomatoes
- Fresh parsley
- Fresh thyme (optional)
Mince garlic. Heat oil over medium heat. Add garlic and reduce heat to
med-low. Cook until garlic is golden (about 3-4 minutes). You can remove
garlic at this point, if you like.
Add drained and rinsed white beans. Stir in oil and heat 2-3 minutes.
Add the tuna and stir in. Heat 2-3 minutes.
Add the olives and the tomatoes. The fresh thyme can be added at this
point. Heat through (about 2-3 minutes). Remove thyme before serving.
