Healthy Serving:
Egg and Vegetable Sandwich

Ingredients

  • 1 tablespoon olive oil
  • 1 cup vegetables
  • 2 slices whole wheat toast

Directions:

Heat olive oil ina pan. Add vegetables and heat 2-3 minutes. Move to the side of the pan and add an egg. Cook egg as desired (i.e., sunny side up, over easy). Eat between 2 slices of whole wheat toast.
