  • Slow-Cooker Chicken and Bean Stew

  • Ingredients

    • 4 boneless, skinless chicken breasts
    • 1 green pepper, chopped
    • 1 red pepper, chopped
    • 1 yellow onion, chopped
    • 5 cloves garlic, chopped
    • 1/2 box fresh mushrooms, chopped
    • 2 tbsp olive oil
    • ½ package fresh baby leaf spinach, or whole leaf spinach, chopped
    • 1 large can peeled whole tomatoes, chopped or crushed, with juice
    • 1 can diced tomatoes with jalapeno peppers, with juice
      (can add additional fresh chopped jalapeno to taste, if desired)
    • 1 can red beans, drained
    • 1 can black beans, drained
    • 1 can pink beans, drained
    • 1 package chili seasoning
    • 1 cup water

    Directions

    Add the olive oil to the bottom of the slow cooker and place the chicken inside. Next, add all the ingredients except the beans. Cover and cook on low 5 to 6 hours, or medium 3 hours, until chicken is cooked through.

    Remove chicken from cooker and shred. Return chicken to cooker. Add beans and stir. Cover and cook for 1 hour longer on low heat.
