  • Spinach, Onion and Mushroom Sandwich

  • Ingredients:

    (1 serving)

    • 2 tablespoons of extra virgin olive oil
    • 1/2 cup chopped red onion
    • 5 oz. defrosted chopped spinach (or 3 cups fresh,baby spinach)
    • 1/4 sliced mushrooms
    • 2 slices of whole wheat bread

    Heat the olive oil on medium. Add the chopped onions. Heat until golden brown (about 15 mins.) Add spinach and mushroom (about 5 mins.) and layer the bread with the mixture and serve.
