  • Steamed Vegetables on the Grill

  • Ingredients:

    • 4 small red potatoes, quartered
    • 4 carrots, cut into 2 inch lengths
    • 2 green peppers, cut into strips
    • 2 red peppers, cut into strips
    • 1 onion, sliced
    • Olive oil


    Divide vegetables in 4 equal portions. Cut 4 pieces of aluminum foil large enough to wrap vegetable portions. Spoon teaspoon olive oil on each piece. Place vegetable portions on foil, adding one ice cube to each and wrap. Place on grill for about 45 minutes. (Do not place directly above coals.) Serves 4.
