  • Tofu Pumpkin Pie

  • Ingredients:

    • 1 can (16 ounces) pureed pumpkin
    • ¾ cup sugar
    • 1 tsp. ground cinnamon
    • ½ tsp. ground ginger
    • ¼ tsp. ground cloves or allspice
    • 1 pkg. (10 ½ oz.) soft or silken tofu processed in a blender until smooth
    • 1 9 inch unbaked pie shell

    Directions:

    • Preheat oven to 450°
    • Cream the pumpkin and sugar. Add spices, and tofu, mixing thoroughly.
    • Pour mixture into pie shell and bake for 15 minutes. Reduce oven temperature to 350° and bake for 40 additional minutes.
    • Chill before serving.
