  • Tomato, Spinach and Bean Soup

  • Ingredients:

    • 3 T olive oil
    • 2 cloves of garlic
    • 1 medium onion (about 3" diameter)
    • Spinach - fresh or defrosted frozen
    • 1/2 of a 1-lb bag
    • 19 oz can cannelini beans
    • 28 oz can crushed tomatoes
    • 4 cup chicken broth
    • Salt
    • Pepper
    • Dried basil
    • Dried oregano

    Directions:

    Heat oil in 8 qt. pan on low/medium. Peel garlic and cut into small pieces. Add chopped garlic to heated oil. Cook for 2-3 minutes or until garlic is golden.

    Add spinach and stir into oil. Cook about 3 minutes or until spinach is just wilted. You can add seasonings at this time.

    Add tomatoes and chicken broth and stir to mix.

    Thoroughly rinse canned beans and add to pot. Heat through.
