  • Vegetable Fried Rice

  • Ingredients:

    (1 serving)

    • 2 tablespoons of extra virgin olive oil
    • 1/2 cup chopped celery
    • 2 cups chopped fresh baby spinach or 1/3 cup frozen defrosted, drained chopped spinach (You can use any combination of vegetables equal to 1 cup or more)
    • 1 large egg
    • 2/3 cup of cooked brown rice
    • Hot sauce (optional)


    Heat the olive oil on medium. Add the celery and stir to combine. Cook 3 to 5 minutes. Stir in the spinach to coat with olive oil. Beat egg in small bowl. Move the heated vegetable mixture to one side of the pan. Add the egg to the pan. Let it cook until it sets slightly. Scramble with a fork, and mix into the vegetable mixture and stir. Add the cooked rice, stir to combine, and heat through. Season with hot sauce if desired.
