Preheat oven to 350 degrees.
Combine egg or egg substitute, all sugar; add sifted dry ingredients, zucchini, vanilla and nuts. Place into 2 loaf pans or one double length loaf pan coated with cooking spray.
Bake for 45 minutes or until done.
Makes 2 loaves, serves 24.
