Ingredients

  • 10-12 (6-inch) corn tortillas
  • 2 mangos, diced (or 2 cups pineapple, diced)
  • 2 avocados, diced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • Juice of 1 lime
  • Salsa and/or hot sauce of choice
  • Handful of cilantro, chopped
  • Salt, to taste (optional)
  • Black pepper, to taste (optional)
  • Chili powder, to taste (optional)
  • Cumin, to taste (optional)
  • Paprika, to taste (optional)


Directions

Yield: 10-12 tacos
Time: 10-15 minutes

Combine pineapple or mango with red onion, bell pepper, avocado, cilantro, back beans, and lime juice in a bowl. Mix thoroughly,

Stir in desired spices while mixing. Chill in refrigerator until ready to use. 

Warm the tortillas in an oven or microwave. Scoop 1/2 cup of the filling into each tortilla. Fold and serve.

If you'd like, serve with your favorite salsa or hot sauce.
