Cauliflower Rice (Three Ways)
Ingredients
- 1 tablespoon olive oil
- 4 cups riced cauliflower
- 1/4 teaspoon salt
- 2 garlic cloves chopped fine
- 1 lime (zested)
- 1/2 - 1 cup cilantro leaves (Depending on preference)
- 1 tablespoon olive oil

- 1/2 teaspoon ground ginger
- 1 small onion chopped fine
- 2 garlic cloves chopped fine

- 1 tablespoon olive oil(or coconut oil)
- 4 cups riced cauliflower
- 1 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 1/2 teaspoon salt
Directions
Yield: About 4 servings
Time: 20-25 minutes
To rice cauliflower
Wash cauliflower and pat dry. Remove outer leaves and break down the cauliflower into 2 inch florets. Working in batches, place florets into a food processor. Pulse 12-18 times until the cauliflower is in small rice-sized pieces.
Cilantro & Lime Cauliflower Rice
Heat oil in a non-stick pan over medium heat. Add garlic and saute for a few minutes.
Add cauliflower and cook for 5-10 minutes. The cauliflower should be slightly soft, not mushy.
Stir in lime zest and cilantro. Salt to taste
Turmeric Cauliflower Rice
Heat oil in a non-stick pan over medium heat. Add garlic and saute for a few minutes.
Add cauliflower and cook for 5-10 minutes. The cauliflower should be slightly soft, not mushy.
Stir in turmeric and ginger. Salt to taste
Spicy Cauliflower Rice
Heat oil in a non-stick pan over medium heat. Add all ingredients and cook for 5-10 minutes. The cauliflower should be slightly soft, not mushy. Salt to taste
