Ingredients

  • 2 lbs. halibut or swordfish steaks
  • 1/8 cup olive oil
  • 1/2 cup dry white wine
  • 2 tbsp. lemon juice
  • 1 tbsp. minced garlic
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 tsp. oregano
  • 12 cherry tomatoes
  • 6 fresh mushrooms

Directions

Yield: 4-6 servings

Time: 25 minutes, plus marinade time

Cut fish steaks into chunks, removing any bones and skin. Combine oil, wine, lemon juice and spices and marinate fish for several hours or overnight. Place fish and vegetables on skewers and grill 5 minutes per side.

This entire dish can be baked, uncovered, at 375° for approximately 10-15 minutes.
